East Mediterranean Chicken Marinade

This is another great chicken marinade, focused on eastern Mediterranean flavors.  It's exceptionally easy and pushes an extraordinary amount of flavor into the meat.  And, without question, is delicious!

Just to briefly re-cap on marinades, the two essential qualities are:


1.  An acid
2.  A base, or dominant flavor

In this case, our acid is lemon juice, and our base flavor is the combination of Greek yogurt, curry and mint.  I enjoy this best with other eastern Mediterranean items, such as grilled eggplant with olive oil, charred spring onions, garlic hummus, olives, and roasted peppers.  This marinade also works well with turkey, lamb and even some mild white-flesh fish.  I hope you like it as much as I do!

Yogurt, curry and Mint Marinade

Prep time: 2 minutes
Inactive cook time: minimum 1/2 hr
Cook time: 20 minutes (for chicken)

Ingredients:

1/2 cup 0% Greek yogurt
1 tbsp crushed garlic (or finely minced)
1/2 bunch fresh mint, rough chop
1 tbsp honey
1 tsp siracha hot sauce
1 tsp curry powder
6 each boneless/skinless chicken thighs, trimmed of fat
juice of 1 lemon

Method:

Mix everything except the chicken in a mixing bowl until completely incorporated.  Add the chicken and work the marinade into the meat.  Either cover tightly and refrigerate, or place in a ziplock bag and refrigerate until ready to use.

When ready to use, salt liberally, and grill on a hot, well oiled grill, until cooked through.

Serve with grilled pita bread, charred spring onions, grilled eggplant, hummus and feta cheese.
